Tuna Pasta

My Nana gets credit for this recipe. Italians saute anchovies in olive oil and garlic to serve over pasta. Nana started doing this with cans of tuna. I started adding veggies and cream sauce to make it a one dish wonder for nights we need a quick meal. Feel free to change up the veggies. Frozen peas or frozen green beans work for nights you do not have time to saute veggies before hand. Although we call it tuna pasta, we typically eat it over grain free pasta, riced cauliflower, or rice.

Servings 5 people with leftovers
- 2-3 tbsp olive oil (enough to cover bottom of pan)
- 3 12 oz cans of solid white albacore tuna in water (We prefer Bumblebee Solid White Albacore in water)
- 1/2 cup chopped onion (Short on time? Use green onions and add toward end of cooking time.)
- 2-3 cloves of garlic, minced
- 1 bunch of asparagus, ends removed and chopped in 2 inch pieces
- 1 cup chopped spinach
Seasonings
- 1 Tbsp Dried Oregano
- 1 Tbsp Dried Italian Seasoning
- 2 tsp Dried Basil
- Salt and Black Pepper to taste
Cream Sauce
- ¾ cup Heavy Whipping Cream
- 3 Tbsp Butter
- ½ cup Parmesan
Optional Add-ins
- 1 small can of slice olives, drained
- ½ cup cooked bacon
- ½ cup chopped pepperoni
Prep
To make this a one dish clean up, first cook your chopped asparagus in a little olive until desired tenderness. Remove from the pan and set aside.
While the veggies cook, open and drain the tuna cans. Chop the onion and spinach. Mince the garlic.
Start boiling water for pasta or making rice.
Main Dish
Cover the bottom of your pan with olive oil and warm.
Add the chopped onion if using and let it saute for 3 minutes.
Add the drained tuna. Stir, breaking up any large chunks of tuna.
As the tuna is sauteing in the oil, add the seasonings. Stir after each addition. Add the minced garlic.
Push the tuna to one side of the pan. Add the cream, butter, and Parmesan stirring until melted and combined.
Stir the tuna into the cream mixture.
Add the chopped spinach and any optional ingredients. If it seems dry, feel free to add more heavy cream.
Once the spinach is wilted, serve over your choice of pasta!
