Peanut Butter Balls

This recipe is thanks to my friend, Rebecca. It has been a winner that we have passed on to many families. We do not always have peanut butter in the house, so we often substitute almond butter. We recommend Barney's Smooth Almond Butter. We also recommend One Degree Organic Sprouted Rolled Oats available at Costco but any oats will do. This recipe is easy to double as well.

Ingredients
  

Main Ingredients

  • 1 cup oats
  • 1 cup coconut (preferably unsweetened)
  • ½ cup natural peanut butter or use almond butter
  • cup honey

Optional Add Ins (choose one or reduce each to 1/4 cup)

  • ½ cup mini chocolate chips
  • ½ cup raisins

  • Mix oatmeal and coconut.
  • Add honey and peanut butter. Mix with a spatula or sturdy spoon.
  • This is the messy part! Once you have mixed as thoroughly as you can, it is time to use your hands! Roll 1½ inch balls. Place on parchment paper lined container or in small muffin liners.
  • Store in the refrigerator or freeze.

Notes

Read your peanut butter labels. Organic is the best, but obviously more expensive and some of the organic peanut butters that separate are not smooth enough for this recipe. Look for Natural Jif or Natural Skippy. Most other peanut butters contain hydrogenated oils.
