Paleo One Minute Muffin

People often ask what we eat for gluten free bread. The truth is because we attempt to have a grain free diet, we do not have bread in our home most of the time since there is not a good store-bought alternative. Enter the Paleo One Minute Muffin!

We do satisfy our cravings with this Paleo One Minute Muffin as well as an Almond Coconut Bread Recipe I have been making from Fast Like a Girl. I replace the hemp seed with flaxseed and do not add the anise. (If I get permission from the author, I will post that recipe soon.)

One Minute Muffin

This easy recipe replaces bread when we crave it. There are many recipes online, but I have found this recipe to have the best ratios. We make it in a ramekin or mug depending on what we want to use it for. Use it for PB and J, egg sandwich, serve alongside stew or soup. It is very versatile!

Making Muffin

  • Melt butter in bottom of ramekin or mug.
  • Add egg and mix.
  • Add almond flour, flaxseed, and baking powder.
  • Mix, scraping sides and bottom.
  • Put in the microwave for one minutes.
  • Invert and serve.
