Gluten Free Pizza on the Grill

I have no idea why I did not start grilling pizza sooner. I use my grill for cooking almost all summer and had never tried pizza.

Gluten Free Pizza on the Grill is simple when using a box mix like Chebe Pizza Crust Mix. It is gluten free and even grain free. However, it is not low-carb due to the tapioca starch.

Saute your veggies beforehand, either on the grill or stove. Also, if using Italian Sausage, precook that as well. Finding a nitrate free ground Italian sausage can be tricky.  Lately, after being unable to find Klements, I have been using Johnsonville Natural. You may have to resort to taking the casing off a few links.

Instead of pizza sauce, try pesto on your gluten free pizza on the grill. We make our own when basil is in season, but you can also purchase pre-made.

Grilled Gluten Free Pizza

Grilling pizza really adds extra flavor. I have only tried this on a gas grill. Before placing the crust in the pan, make sure your pan fits on the grill with the lid closed. Also, do not use your best pans! My husband and I do not tolerate mozzarella well, so we often opt for goat cheese.

Equipment

  • Grill (preferably gas)
  • 2 Cookie Sheet with sides

Ingredients
  

Pizza Crust

Topping

  • 15 ounce can of pizza sauce (We like Pastorelli pizza sauce.)
  • Parmesan cheese for sprinkling Kirkland's at Costco does not have extra fillers
  • 8-16 ounces shredded whole milk mozzarella or goat cheese mozzarella

Topping Options

  • 1 package Italian sausage cooked
  • 1 package nitrate free pepperoni
  • 1 can sliced olives
  • 1 sauteed onion
  • sauteed spinach
  • sauteed mushrooms
  • sauteed peppers
  • Any veggie you desire!

Instructions
 

  • Prep your cheese, meat, and veggies.
  • Preheat your grill to medium heat (this depends on your grill).
  • Follow the directions on the Chebe package. We always use the optional grated cheese.
  • Place the dough in the middle of your cookie sheet. I use a small glass to "roll" it out.
  • It is more of a pushing and pressing motion. It is okay if it is not a perfect rectangle, but make sure there are no holes.
  • Place the crust on the grill. Check after 5 minutes. The crust should just barely be getting a few brown spots. Watch carefully, checking every minute. (This should not take more than 8 minutes depending on your grill.)
  • Remove from grill. I like to slide a metal spatula under the crust to loosen it from the pan. This will make it easier when cutting and serving later.

Prepare Pizza

  • Spread on the sauce. Sprinkle the sauce with Parmesan.
  • Add the cooked Italian sausage.
  • Add the cheese and any veggies you are using.
  • Place back on the grill for 10-15 minutes covered. Crust should be golden brown and cheese melted.
  • If the bottom is getting too dark, lower heat.
  • Remove and serve preferably outdoors!
